Rice noodles come in different shapes, and the most common one is the round, spaghetti-like noodles called Yunnan rice noodles or mi xian. Originating from Yunnan province in southwest China, the noodles are often made fresh from a mixture of non-glutinous rice and water.
Can spaghetti noodles replace lo mein noodles? While spaghetti noodles can be used as a substitute in a pinch, the texture and flavor will be different. Spaghetti is firmer and has a different wheat base, which may not absorb Asian sauces as well as lo mein noodles.
Some of the different types of Chinese noodles available include Lo Mein noodles, Teochew Flat noodles, Knife-cut Noodles, Yi Mein noodles, etc. and a few that can be prepared like soup, including Lai Fun Thick Rice noodles, Silver Needle noodles (Yin Zhen Fen), Yunnan Rice noodles, Wonton noodles, and many more.
Pasta is a type of noodle which is specifically made from durum wheat (or made to look like it is). Spaghetti is made from durum wheat so is a pasta. Chowmein is stir fried noodles, which may be made of rice or any other grain. In principle then chowmein could be stir fried spaghetti, but that's rare.
Vermicelli, which translates to “little worms” in English, is a long, very thin pasta. In Italy, vermicelli is thicker than spaghetti, but in the USA the pasta shape is thinner. This pasta originated in Campania, but this type of pasta has also been adopted in other countries.
