Traditionally made with fish or poultry stock, I've upped the ante with a southern Japanese Tonkotsu stock made with a combination of pork and chicken. I started this one with my Tonkotsu Base (which I now make in large quantities and freeze), then layered on the nutty flavors of miso and tahini.
Tonkotsu, which means “pig bone,” is made by boiling pork meat and bones together, thus creating a thick and hearty broth with a meaty flavor. The soup has a milky consistency much like miso, so don't get confused about which one you want to order!
While tonkotsu ramen is a style of broth, miso is absolutely a flavor of ramen, and as such, you'll most likely see a lot of variations. One of the most significant changes you'll see in different miso broths is the base ingredient of the miso itself.
Miso ramen is rich in umami flavors but also comes with a heightened creaminess. The miso paste brings salty-sweet and deep layers to the dish and the springy noodles, crunchy toppings, and tender meat, veggies, or tofu all add to a tantalizing texture.
It's nutritious and delicious. Healthy doesn't have to mean boring. With Tonkotsu ramen, the nutrition lies in its flavourful broth. By steeping the pork bones for hours, as mentioned before, all the healthy goodness within the bones flows out and marinates the soup.
