FAQ
The classic dipping sauce for soba is a combination of dashi, soy sauce, mirin, and a bit of sugar. An assortment of relish-style items is also paired with the noodles: a dab of wasabi, some freshly grated daikon, and finely chopped green scallions.
- Is the sauce we use for cold soba same as soya sauce? No. Sauce for soba is made from (1) kaeshi: soy sauce, mirin (sweet liquore made from rice), all mixed and cooked and (2) dashi: soup stock made from water and shaved dried bonito (katsuobushi) and/or konbu (dried kelp).
NISSIN SOBA makes irresistible noodles with yakisoba sauce and vegetables. With the new draining cap, it's easy to prepare and serve in the office or at home.
Soba Broth: kombu (dried kelp), katsuobushi (dried bonito flakes; optional), sake, mirin, and soy sauce. Alternatively, you can use mentsuyu (noodle soup base) to quickly make the soup.
Russian buckwheat can still be imported, but instability and shipping disruptions have hampered and delayed procurement.
