Soumen is thin noodles.
Sōmen served in hot soup is usually called nyūmen and eaten in the winter, just like soba or udon are. Some restaurants offer nagashi-sōmen (流しそうめん flowing noodles) in the summer. The noodles are placed in a long flume of bamboo across the length of the restaurant. The flume carries clear, ice-cold water.
Sōmen (素麺,そうめん) are white Japanese noodles made of wheat flour and they are very thin, about 1 mm in diameter.
Being a wheat noodle, ramen noodles contain magnesium, calcium, selenium, folate and small traces of B-vitamins. Somen noodles are made from the same ingredients as ramen noodles; however, they are much thinner, similar to vermicelli noodles.
The name is derived from the Sanskrit words “Sou” meaning “gentle” and “Men” implying “mind.” Thus, the name “Soumen” can be interpreted to mean “a gentle-minded person” or “one with a kind heart.” This name is often given to male children and is particularly popular in regions of West Bengal and Bangladesh.
