Serving Tip: Freshly made suan la fen is quite spicy, especially when the broth is hot. Be careful when you slurp the noodles because the chili oil will float on the top and may catch you by surprise. If it tastes too spicy for you, simply wait for the broth to cool down a bit and it will be much easier to handle.
The typical toppings for suan la fen are chopped coriander leaves, thinly sliced scallion rings, za cai, fried peanuts, and soybeans. Lightly fry the peanuts in the pan/wok with a teaspoon of oil over low heat until they start to turn color and become crunchy.
The brown paper lid also makes it easy to cap and uncap as you please. Ingredients include vermicelli noodles, chilli paste, vinegar, chilli oil, seasoning, vegetables, and even fresh peanuts for the complete suan la fen experience. To cook it, simply pour everything into the cup, followed by hot water.
In Chinese, the most commonly used names are fěnsī (Chinese: 粉絲; lit. 'noodle thread') and fěntiáo or hóngshǔfěn (Chinese: 粉條 or Chinese: 紅薯粉; lit. 'noodle strip' or 'sweet potato noodles').
