Korean black bean noodles have a delicious earthy, sweet, sour, decadent flavor. They're served with chewy Korean noodles (or udon noodles). It's also slightly spicy, which perfectly balances out the sweetness.
What is black bean sauce made of? Homemade black bean sauce is full of only the good stuff, and our black bean sauce recipe has got no nasties. It features fermented black beans (which you can get from your Asian grocer), a whole lot of garlic, ginger, soy sauce and Chinese vinegar.
The base of the sauce is made from Korean black bean paste (called chunjang) which is made from soybeans, flour, caramel and fermented. Ingredients like onion, zucchini and pork are sautéed and mixed with the paste along with a cornstarch slurry and water to create a gravy-like consistency that coats the noodles.
Black bean noodles are a healthy, gluten-free alternative to regular noodles. Black bean pasta is great for digestion, heart health, and lowering cholesterol levels because it is a natural source of fiber. This pasta has almost eight times the amount of protein and iron as regular pasta.
For Koreans, we love having this during moving days because it is cheap, filling, and accessible for delivery back then. It has grown into a tradition for us now.
