Heat the oil over medium-high heat for a minimum of 1 minute. Take a few longer noodle pieces in your hand and dunk just the ends into the hot oil. If the oil is hot enough, the submerged parts will bloom within seconds into puffy, crispy noodles.
​Mee Krob is a Thai dish influenced by Chinese cuisine. The name means “crispy noodles”. It is made with rice noodles and topped with a sweet and sour sauce characterised by an acidic flavour such as tamarind sauce or lime juice.
At my local Chinese, they call this Crispy Chow Mein Noodles. It's a Hong Kong / Cantonese style dish, and there are a lot of variations but the core of it is a bed of deep fried crunchy noodles topped with a saucy stir fry.
To deep-fry, add the noodles to at least 1 1/2 inches of hot oil without softening them first. Make sure the oil is hot enough by dropping one noodle into the oil. If the noodle immediately puffs and turns white, the oil is ready. Fry the noodles in batches, being careful not to crowd the pan.
Heat the olive oil in a skillet and add your overcooked pasta. Gently sauté over medium heat for a few minutes until the pasta's texture has firmed up. The whole process takes less than 10 minutes and you'll know it is done when the edges of the pasta have started to crisp and light browning has begun.
