Fideos are made of durum wheat and water and are then rolled out, dried, and cut to a thickness between angel hair and spaghetti (although I've seen pasta the thickness of spaghetti in some dishes).
Simply put, fideos means “noodles” in Spanish. But the word actually refers to a particular kind of noodle—short and golden, with vermicelli-like thinness—as well as to specific dishes.
Mexican fideos (which is just Spanish for “noodles”) are super similar to Italian vermicelli in shape and ingredients (wheat and water), but they are cut shorter before being packaged and are often toasted in oil for a richer flavor, rather than being boiled.
Fideo is quick and easy to make with toasted pasta, tomatoes, and spices. This recipe was given to me by my mother-in-law. It goes great with any meat dish, including carne asada. I use fideo in place of rice as my side dish.
