What makes GreeNoodle® so special? Made with unbleached and unprocessed wheat flour and organically grown Morohieya – an exceptionally nutritious vegetable that contains more minerals, vitamins and dietary fibers than spinach, broccoli, or carrot.
The amount of freeze-dried spinach that is added to the noodles is enough to make it green, but that's about it. There isn't enough to provide any nutritional benefits compared to regular pasta. Your decision to eat refined, whole wheat, green, red, long, short or bow-tie noodles won't have much of an effect anyway.
For green pasta, they suggest adding spinach juice. For a vibrant red, beet juice is the way to go. Eggs are already commonly added to homemade pasta, and the yolks will give the dough a bright yellow tint.
