Banh pho is the noodle used in pho dish. What differentiates banh pho from other rice noodle varieties is banh pho has square or rectangular cross-sections (depending on width size), as opposed to mostly round cross-sections most other noodles come in.
Rice noodles don't offer much in the way of nutritional value, so Hartley suggests swapping them out for brown rice noodles to make your pho healthier. While it may not be traditional, at home, you can get more nutrition out of your pho by using brown rice noodles for more fiber, Hartley says.
Pho noodles are clear, tender, and made with white rice flour. Ramen noodles are yellow, bouncy, and made with wheat flour. Pho has a clearer and lighter soup than ramen. Ramen is hearty and has a creamier and more complex broth.
Types of noodles. Bánh phở – flat rice noodles; these are available in a wide variety of widths and may be used for either phở soup or stir-fried dishes. Bún – thin white round noodles (often called rice vermicelli) steamed in leaves. Mì – egg or wheat flour noodles.
Noodles: I use an 8 oz. package of dried rice vermicelli noodles, but you can use any kind of THIN rice noodles. Meat– chicken, pork, steak or raw shrimp. It's important to slice the meat as thinly as possible, against the grain.
