Similar to Chinese soup bases, ramen soup is generally made from chicken or pork, though vegetable and fish stock is also used. This base stock is often combined with dashi stock components such as katsuobushi (skipjack tuna flakes), niboshi (dried baby sardines), shiitake, and kombu (kelp).
Ee is a variant on spelling Yi” (Yi Bingshou's family name), whilst “fu meant household. Hence, Ee-fu Noodles (Chinese: 伊府面) basically translates as noodles from the House of Yi. Fun fact: Yi Bingshou's head chef was also credited for creating Yangzhou fried rice.
Rice noodles are a type of pancit noodle made from rice flour and water; some also include tapioca starch or cornstarch to increase its gelatinous and chewy texture. They're sold flat and are more fragile than most noodles. You often don't have to “cook” them (i.e. in boiling water over heat).
This pork stir fry is my latest leftover obsession. It's easy to pack, can be reheated in a microwave, and will keep you full all afternoon. Like Stir Fry Noodles and this Teriyaki Chicken Stir Fry, you can enjoy this recipe for a Sunday dinner, then have the rest for lunches for the first half of the week.
Noodles made with flour, water, and/or egg are fine for halal. The other stuff with the noodles and the broth can't have any pork; any meat or chicken must have been from a halal-slaughtered animal.
