Rigatoni: Slightly curved, tubed-shaped pastas, usually larger than penne. The name is derived from the Italian word rigato, which means “ridged” or “lined.”
Rigatoni are the best pasta shape for substantial meat sauces, like ragù, as well as the classic tomato sauce or a seafood sauce. They can be taken out of their cooking water when still very much al dente so they can finish cooking directly in the pan with the sauce.
Rigatoni takes its name from the Italian rigati, “ridged.” The semolina dough is pressed through a ridged mold, forming lengthwise striations all around the pasta, which is then cut into bite-size pieces and dried or cooked immediately.
Penne is essentially a smaller version of rigatoni. This makes it a good fit for lighter, tomato-based sauces such as vodka or marinara.
