Stir frys are one of my favorite meals to make when I'm pressed for time, want something comforting but also be packed with protein and veggies. These soba noodles make for the perfect vehicle for this decadent, delicious sauce and still holds up to all the veggies mixed into it.
Heat a non stick or cast iron pan over medium heat. Add a bit of sesame oil to the skillet. Layer the noodle mixture evenly over the bottom of the pan. Cook the noodles, stirring often, until they are brown and crispy, about 15 minutes.
Serve toppings warm or cold, cooked or raw. Steamed baby bok choy, radishes, bean sprouts, hard boiled egg half, cilantro. Edamame, shredded red cabbage, tofu, green onion. Steamed broccoli, sautéed mushrooms, red bell pepper, sesame seeds.

They're mostly made with buckwheat flour, which is both gluten-free and full of healthy proteins, vitamins, and minerals.
Bring a large pot of salted water to a boil. Cook noodles until they are about 1 to 2 minutes from done, according to package instructions. They should be very al dente, still a little too firm to eat, but not excessively hard and chewy. Drain and toss with 1/2 tablespoon of the oil to prevent sticking.
