Somen noodles are a type of thin Japanese noodles made from wheat flour, with a mild flavor and delicate texture. They are usually served chilled with a soy-based dipping sauce, as well as in soups, salads, and stir-frys.
Being a wheat noodle, ramen noodles contain magnesium, calcium, selenium, folate and small traces of B-vitamins. Somen noodles are made from the same ingredients as ramen noodles; however, they are much thinner, similar to vermicelli noodles.
The answer is ” SOBA” , the buckwheat noodle. 100% buckwheat soba noodle soup – colour of soba is darker! Why? Udon, ramen, yakisoba and somen noodle are all made from white flour and can be made with bleached refined flour which doesn't have many nutrients and high GI – a recipe for overweight and disease!
