HokkaidoRamen & Izakaya. Ramen is a Japanese noodle soup dish with oriental-style wheat noodles served in a rich and savory broth with pork, chicken, or beef, the freshest combination of vegetables, and a specially soft-boiled egg that's marinated in a sweet soy sauce.
But the main way ramen is categorized is by its primary flavor, which comes from how its broth is made. There are four general classes of ramen: shoyu, tonkotsu, miso, and shio. Here's what you need to know about these four types of ramen.
Sapporo ramen is a hearty Japanese noodle soup that features a rich broth seasoned with red miso, a paste made from fermented soybeans, and chukamen (fresh noodles). Sapporo ramen, named for the city of Hokkaido where it first rose to popularity, is sometimes known as miso ramen.
1 Ramen (Tsukemen) Tomita's tsukemen is everything you'd expect it to be. It's the pinnacle of tonkotsu gyokai (pork and fish tsukemen).
Hakodate ramen. Of all the ramen in Hokkaido, Hakodate ramen has remained the most stalwart against change, retaining the same style that emerged centuries ago. This ramen variety features a clear shio (salt) broth made from chicken bones and kelp with thin, straight noodles that lie under the surface of the soup.
