Shoyu: Shoyu is the original type of ramen. It features a soy-based broth flavored with soy sauce, mirin, pork or chicken stock, and rice vinegar. Some of the most common toppings for shoyu ramen are marinated soft-boiled eggs, bamboo shoots, corn and bean sprouts.
The dish has its origins in China, where it was introduced to Japan in the 19th century. The first known instance of ramen in Japan occurred in 1859, when the Chinese ambassador to Japan, Zeng Gongliang, presented the dish to the Japanese Emperor.
It starts in 1800s China, which is considered to be the birthplace of all things ramen. The idea of noodles in a soupy broth travelled with Chinese immigrants in the late 19th or early 20th Century to Japan after the Meijiichin [Meiji Restoration] in 1868.
Ramen is a Japanese adaptation of Chinese wheat noodle soups. It is first recorded to have appeared in Yokohama Chinatown in the early 20th century. Although ramen takes its name from lāmiàn, it did not originate from the hand-pulled lamian noodles of northern China, since the noodles used in ramen are cut, not pulled.
While the word ramen means pulled noodles in Japanese when we talk about ramen we are also referring to the delicious dish that has become so popular around the world. Ramen mainly consists of the signature kansui noodles served up in a beautiful broth and decorated with different toppings.
