Shiso, also known as Perilla, Beef Steak Leaf, or Japanese Basil, is actually a member of the mint family. Though I first experienced shiso while living in Japan, it turns out shiso is widely used across all of Asia from China to India, most heavily in Japan and Korea.
In Japanese cuisine, we sometimes see shiso added as garnish for ramen, adding a contrast to rich soups and broths. Just as shiso is used to mellow out strong flavors, frying whole shiso leaves as tempura can also help mellow out the strong flavor of the leaf.
Shoyu Ramen. Shoyu means soy sauce in Japanese and this style of noodle dish was actually the first type of ramen and is still going strong. There's lots of different varieties of shoyu ramen but the taste is normally salty and tangy.
Sriracha: It's a classic for a reason, it adds just the right amount of heat and tanginess. Plus, it's readily available almost anywhere. Garlic Scorpion: If you want a garlic flavor with that extra heat, this hot sauce is for you.
What Does Shiso Taste Like. It's vibrant, herbaceous, and citrusy with a mildly astringent taste and bitter finish. Some also note that it has hints of mint, basil, cloves, licorice, and cinnamon.
