Yokai chefs make delicious ramen by mixing traditional Japanese ingredients with new techniques and bold flavors. Our ingredients are prepared fresh daily, our broths are made from scratch, and our combinations offer some truly unique takes on your favorite ramen dishes.
This is a dish consisting of noodles immersed in a broth made from various meats and bones (pork, chicken, beef), fish, seafood or vegetables, deliciously seasoned with miso, soy sauce, soy must or even sake kasu (sake residue).
Some chefs actually purport that shio ramen is actually the most difficult to master, as it can't rely on a single umami-packed ingredient like miso or soy sauce to add depth and flavor.
Jin is said to depict the way two people should treat one another. We, the founding partners, chose Jin as our ramen bar's name not only out of an enthusiasm for ramen, but also from a desire to grow a business that has a positive impact on the community.
Yokai is a catchall Japanese word for ghosts, demons, monsters, shapeshifters, tricksters, and other kinds of supernatural beings and mysterious phenomena. Yokai interact with the human world and spark common notions of frightful things.
